Fairmont Cheshire – The Mere, a 157-acre estate near Knutsford with a lake, woodland and a 1930s parkland golf course, has completed a full restoration and expansion project. The brief went to Bergman Design House, founded by Marie Soliman and Albin Berglund, working alongside architects Leach Rhodes Walker for developer Select Group and Accor's Design & Technical Services team.

Rooms increased from 81 to 116, an increase of more than 40 per cent, with 23 of them suites. The project included a new spa, a revised food and drink offer and refreshed public spaces. The design drew on materials including Japanese lacquer, handcrafted zellige tiles, coloured cement, beaten metals and figured timber veneers.

Soliman said "every material decision was tested against that lake view." Public spaces take cues from mid-century hospitality, with sculptural forms and layered lighting. Among the new dining venues is a restaurant from Gordon Ramsay, alongside The Orangery and The Club Lounge.

The new Fairmont Spa covers 1,715 square metres and was developed with spa consultant Rebecca Doyle, featuring a 20-metre pool, outdoor pool, hydropool, sauna, steam room and hammam. Soliman said the goal was for the space to "belong to the woodland," hence the use of rustic timber as the primary material.
